Iberico tenderloin (solomillo) is naturally lean with incredible tenderness and taste.  There are two tenderlions per pig, each weighing around one pound, depending on the size of the pig.  Be careful not to overcook this exquisite cut.  It is best served medium to medium rare.   (Sometimes available cut into medallions.)
